Eggs with Spinach











Spinach Eggs
2.5 points or 4 points (depending on the eggs)

1 tsp oil
1/2 onion chopped
1 cup (or more) fresh spinach
chopped
3 egg whites slightly beaten (or two egg whites and a whole egg)
1/8 cup fat free shredded cheese
salt and pepper to taste

Saute' chopped onion in oil. Add chopped spinach and cook until it starts to wilt. Add eggs. You can either scramble them or make an omelet. Add cheese at end.

YUMMY breakfast with an easy serving of veggies added!

Looks yummy! I'll give it a try tomorrow morning. Is the 2.5 if you use egg beaters and the 4 for real eggs or is it and egg and some egg whites?

This is how I figured out the points:

oil *1
onion *0
spinach *0
3 egg whites *1
2 whites and one egg *2.5ish or 3 if you round up
fat free cheese *.5

Does that make sense? So 4 points would be using 2 egg whites and a whole egg. I think that using egg whites and egg beaters would be the same points-2.5 or 3 depending on rounding or not.
